Trader Joe’s Sun-Dried Tomato Focaccia Turkey Sandwich: A Sandwich Hall of Fame Winner

This sandwich has officially earned its spot in my personal Sandwich Hall of Fame. We filmed a quick video of it a few months ago, and it’s now sitting at a cool 4 million views—so apparently, I’m not the only one who’s obsessed with the combo of pesto mayo, juicy tomatoes, savory turkey, crisp greens, and that pillow-soft sun-dried tomato focaccia all slathered in sauce. It’s the kind of sandwich you crave in a big, handheld, sauce-drenched form.

Let’s just say it’s worth the trip to Trader Joe’s.

How To Make This Sandwich

Step 1: Toast and Cut The Focaccia

  1. Start by toasting your sun-dried tomato focaccia at 400°F for about 5-8 minutes. Trust me, it makes the bread even better.
  2. Once toasted, slice the focaccia horizontally through the middle with a serrated knife, keeping it sideways so you get a nice, even cut.

Take the top piece off and set it aside. Keep the crumbly side facing up!

Step 2: Spread a Layer of Pesto Mayo

I use the Costco pesto mixed with mayo here, but this basil sauce is also A+!

Step 3: Add Your Sandwich Materials

I like turkey, tomato, sprouts or greens, and red onion.

Step 4: Dollop with a Little More Mayo

It seems weird, but I just dollop a bit more mayo right on top so you don’t have to tip your top piece of bread upside down and lose all the crumblies.

Step 5: Place the Top Piece Back On and Squish It Down

Nice and secure!

Step 6: Cut and Serve

That clean slice through the center is so satisfying!

This is my soul sandwich.

I’ve eaten about 73 of these in the past three months (give or take a few). The combination of pesto mayo, sun-dried tomato focaccia, turkey, red onion, tomato, and greens hits me on a deep, emotional level. Honestly, you could write this recipe on my gravestone. It’s that meaningful.

Not only is it my ultimate crave-worthy sandwich, but it’s also my lifesaver on those days when I have zero energy left (which, let’s be honest, happens often). It’s the perfect solution for when you’re running on empty but still need something delicious to get you through the day.

This has become our go-to sandwich for those red alert nights when everyone’s hungry, and you’re just trying to get dinner on the table before running out the door.

I always think I’m going to have one wedge, but then somehow it’s two. And half of another? It’s the layers, the textures, the flavors. The sharp bite of the onions against the creamy pesto mayo. The juicy tomato with the hearty turkey and soft focaccia. It’s just… ugh.

It’s more than just a sandwich—it’s practically a lifestyle.
